

High West Distillery has announced the nationwide release of Cask Strength, a limited-edition blend of straight bourbons designed to appeal to both seasoned whiskey connoisseurs and casual drinkers alike. The 117-proof release marks a boozy milestone for the Park City, Utah-based distillery, coinciding with Distilling Director Isaac Winter earning his Master Distiller Certification, following a rigorous evaluation rooted in traditional American whiskey-making techniques.
“This was a really fun blend to put together,” Winter said in a statement shared by the brand. “Building on our high-rye blending philosophy, this Cask Strength expression uses our Bourye blending approach to precisely balance rye-driven spice with malted barley richness.”

The small-batch bourbon is a blend of spirits aged between six and 20 years, sourced from Indiana, Kentucky, and Tennessee. The whiskey was finished in new, charred American white oak barrels and bottled at 58.5% ABV. True to the well-regarded distillery’s reputation for complexity, the non-chill filtered bourbon features a diverse mash bill. The Indiana component leads with a 21% rye content, while the Tennessee and Kentucky proportions are meant to provide a foundation of corn and malted barley.
According to High West’s tasting notes, the expression opens with aromas of butter-poached green apples and honey-drizzled cornbread. The palate offers flavors of sweet plantains, dried apricots, and Earl Grey Crème tea, leading to a finish characterized by kumquat and white chocolate.
